Appearance : Pale yellow in colour with multiple streams of fine bubbles rising to form an abundant ring of effervescence at the top of the glass.
Nose : Delicate, ethereal and complex, Notes of hazelnut and caramel made with salted butter. Hints too of ripe apricots and crystallized orange.
Palate : A subtle marriage of wild strawberries, blood oranges and honey from lime trees. Soft, caressing bubbles and a silky, creamy vinosity. Long on the palate right through to a finish laced with ripe lemon and liquorice.
Food matching : Perhaps best enjoyed just on its own, served chilled, but not too cold (8 - 9°C) in an ample glass, but delightful too with flakes of mature Comté cheese or with scallop carpaccio.
Awards : Silver medal at the Concours Général Agricole de Paris 2018. Gold medal at the Concours des Grands Vins de France Mâcon 2018. Gold medal at the Concours des Champagnes du Vignoble d’Épernay 2017.
